Grilled Mexican Chorizo

Description of the meal: Grilled Mexican Chorizo is a flavorful sausage made from pork and seasoned with a blend of spices. It's perfect for grilling and can be served in tacos, burritos, or on its own with a side of beans and rice.

Ingredients:

  • 1 lb fresh Mexican chorizo sausage links
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • Corn tortillas, for serving
  • Lime wedges, for serving
  • Fresh cilantro, chopped, for garnish
  • Mean Green, to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Brush the chorizo sausages with olive oil to prevent sticking.
  3. Grill the chorizo sausages for 10-12 minutes, turning occasionally, until fully cooked and browned.
  4. In a separate skillet, sauté the onion and bell peppers until tender and slightly charred.
  5. Serve the grilled chorizo sausages with sautéed onions and peppers, corn tortillas, lime wedges, Mean Green and fresh cilantro.

Notes

  • Feel free to use any of our sauces in this recipe. We just found that Mean Green complimented it best!
