Shrimp & Grits

Description of the Meal: Shrimp and grits is a classic Southern dish that features creamy grits topped with tender shrimp cooked in a flavorful sauce.

Ingredients:

  • 1 lb of raw shrimp, peeled and deveined
  • 2 cups of water
  • 2 cups of milk
  • 1 cup of stone-ground grits
  • 1/2 cup of shredded cheddar cheese
  • 4 slices of bacon, chopped
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 cup of chicken or seafood broth
  • 2 tablespoons of all-purpose flour
  • 1 tablespoon of Cajun seasoning
  • Salt and black pepper to taste
  • Mean Green, to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. In a large saucepan, bring the water and milk to a boil over medium-high heat.
  2. Slowly whisk in the stone-ground grits, reduce the heat to low, and cook for 20-25 minutes, stirring occasionally, until the grits are creamy and tender.
  3. 3. Stir in the shredded cheddar cheese and keep the grits warm over low heat.
  1. In a large skillet, cook the chopped bacon over medium heat until crispy, then remove with a slotted spoon and set aside.
  2. In the same skillet, add the diced onion and green bell pepper, and cook for 3-5 minutes until they begin to soften.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Sprinkle the flour and Cajun seasoning over the vegetables and stir to combine, then gradually pour in the chicken or seafood broth, whisking constantly until the sauce thickens.
  5. Add the peeled and deveined shrimp to the skillet and cook for 3-5 minutes until they turn pink and opaque.
  6. Season the shrimp and sauce with salt and black pepper to taste.
  7. To serve, spoon the creamy grits into bowls and top with the shrimp and sauce. Garnish generously with chopped fresh parsley, Mean Green and crispy bacon bits.
