Most commercial hot sauces rely heavily on fermented pepper mash.

We don't.

We build our sauces around fresh peppers sourced domestically in the United States whenever possible.

Mean Green took 9 months to recreate after we accidentally lost the original recipe.

Dragon's Breath sat in development for over 10 years before it ever reached a bottle.

Big Red One was delayed for months while we searched for the right pepper that could be sourced consistently year-round.

Tango Mango required outside food science expertise before we finally landed on the recipe you know today.

This is our list of ingredients and practices you'll never find in a bottle of 13 Stars Hot Sauce.

We believe great hot sauce should get its flavor from real ingredients, not chemistry.

Xanthum Gum

Function: Thickening, binding, and stabilizing agents

Relevant Product Types: Many commercial sauces, dressings, and condiments

Many hot sauce companies use gums to artificially create a thicker texture.

We don't.

The consistency of our sauces comes from the peppers, fruits, vegetables, and ingredients themselves (not a thickening additive).

When you taste a 13 Stars sauce, you're tasting real ingredients doing the heavy lifting.

Pepper Extracts

Function: Artificially increase heat levels

Relevant Product Types: Extreme heat sauces and challenge sauces

Some hot sauces rely on concentrated pepper extracts to create intense heat levels that would be difficult to achieve naturally.

We believe peppers should be the star of the show.

If a sauce is hot, it's because we used hot peppers; not because we added a laboratory-concentrated extract.

The result is a more balanced heat profile with actual flavor behind it.

Artificial Food Dyes

Function: Alter or enhance color

Relevant Product Types: Processed foods, beverages, candies, and some sauces

Color should come from ingredients, not chemistry.

The vibrant colors in our sauces come from fresh peppers, fruits, vegetables, and spices NOT artificial dyes designed to make products appear fresher or more appealing.

Nature already does a pretty good job.

High Fructose Corn Syrup

Function: Low-cost sweetener

Relevant Product Types: Many mass-produced condiments and sauces

Some manufacturers use high fructose corn syrup because it's inexpensive and highly sweet.

We prefer to let ingredients contribute their own character and flavor.

When sweetness belongs in a recipe, we choose ingredients that complement the overall flavor profile instead of overwhelming it.

Artificial Flavors

Function: Replicate flavor without the actual ingredient

Relevant Product Types: Countless packaged foods

If we want a sauce to taste like mango, ginger, garlic, or citrus, we'd rather use the real thing.

Artificial flavors may be common in the food industry, but they aren't part of our approach.

We're committed to building flavor from real ingredients whenever possible.

Pepper Mash

Function: Lower-cost pepper base

Relevant Product Types: Mass-produced hot sauces

Many commercial hot sauces rely heavily on bulk fermented pepper mash.

While fermentation has its place, we often choose fresh peppers because they deliver brighter flavor, cleaner heat, and a fresher overall taste experience.

That's a difference you can taste.

Excessive Vinegar

Function: Cost reduction and shelf-life extension

Relevant Product Types: Many commercial hot sauces

Vinegar has an important place in hot sauce.

Too much of it doesn't.

Many sauces are built around vinegar first and peppers second.

We take the opposite approach.

Our goal is to showcase the peppers and supporting ingredients—not hide them behind an overpowering wall of acidity.
