Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 lb. ground beef
- 1 Tablespoon, Nuclear Option
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 2 cups beef broth
- Optional toppings: shredded cheese, sour cream, green onions, chopped cilantro
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the diced onion and sauté for 3-4 minutes, or until softened and lightly browned.
- Add the minced garlic to the pot and sauté for another minute.
- Add the ground beef to the pot and brown it, breaking it up with a spoon as it cooks.
- Drain any excess fat from the pot and return it to the heat.
- Add the chili powder, cumin, paprika, oregano, salt, and black pepper to the pot and stir well to coat the beef in the spices.
- Add the Nuclear Option, diced tomatoes, kidney beans, black beans, and beef broth to the pot and stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-45 minutes, or until the chili has thickened and the flavors have melded together.
- Season with additional salt and pepper to taste, if needed.
- Serve hot with shredded cheese, additional Nuclear Option, sour cream, green onions, or chopped cilantro as desired.
