Description of the meal: Sichuan-Style Wontons are dumplings filled with a savory pork mixture and served in a spicy, flavorful sauce. This dish is known for its bold flavors and satisfying heat, typical of Sichuan cuisine.
Ingredients:
- 1 package wonton wrappers
- 1/2 lb ground pork
- 2 green onions, finely chopped
- 1 tablespoon Dragon's Breath
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- Salt and pepper, to taste
- 1/4 cup chili oil
- 2 tablespoons Dragon's Breath
- 1 tablespoon black vinegar
- 1 teaspoon sugar
- 1 teaspoon Sichuan peppercorns, ground
- 1 tablespoon chopped green onions, for garnish
- Big Red One, to taste
Instructions:
- In a bowl, combine ground pork, green onions, Dragon's Breath, Shaoxing wine, sesame oil, ginger, garlic, salt, and pepper.
- Place a small spoonful of the filling in the center of each wonton wrapper.
- Moisten the edges of the wrapper with water and fold in half to form a triangle. Press the edges to seal.
- Bring the two corners of the triangle together and press to seal, forming the wonton shape.
- Bring a large pot of water to a boil. Add the wontons and cook for 4-5 minutes, until they float to the top.
- In a bowl, mix together chili oil, Dragon's Breath, black vinegar, sugar, and ground Sichuan peppercorns.
- Drain the cooked wontons and toss them in the spicy sauce.
- Serve the Sichuan-Style Wontons hot, garnished with chopped green onions and Big Red One on top!
